Krisp Zucchini

As I have been creating my vegan eBook and as I feel zucchini is an easy essential vegetable that should be apart of almost every meal each week I came up with this ‘Krisp Zucchini’ Recipe to focus on the key ingredient – ZUCCHINI! Full of antioxidants, vitamin c, b vitamins, calcium, omega 3- fatty acids – AKA it’z amazing for pregnancy!

KRISP ZUCCHINI

TO MAKE IT

Zucchini Krisps
zucchini  (1 – sliced ), almond meal (1/2 cup), maple syrup (1/4 cup), vegetable oil

Salad
lettuce (1/2 – diced), spinach (handful), cucumber (1 –sliced), tomato (1-diced)

Prepare zucchini krisps by coating in pure maple syrup then coating in almond meal. Heat a pan to high with a little bit of oil and place your coated zucchini in for 3-5 minutes until crispy on the outside. Serve immediately.

In a bowl, combine all salad ingredients and serve with zucchini krisps.
