Cashew Nut Chicken & Coconut Rice
I just absolutely love a Thai dish! We order Thai pretty much once a week. In a bid to follow a better budget plan I am trying to replace that take out Thai with homemade.
If you are looking for healthy pregnancy recipes or family friendly recipes this is exactly that! Highly recommend trying this one!
TO MAKE IT
Brown rice (1 cup), coconut milk (1/2 cup), water (1 1/2 cups), ginger (1 tbsp)
Using a pressure cooker or rice cooker add all ingredients and select rice. If cooking in a pan, follow the same method and the back of rice packet instructions which is usually to cook covered for 20 minutes.
THE CASHEW CHICKEN
Chicken Breast ( 2 breasts – sliced thinly), Cashews (200g or 1/2 cup) Carrot (3 – sliced), Zuchinni (1 large – diced),
onion( 1 – sliced), minced ginger (1 tbsp), minced garlic (2 tbsp), Hoison sauce (1/2 cup),
Water (1 cup).
Heat an oven to 180 degrees and line a baking tray.
Place everything but the cashews in the baking dish.
Cook in the oven for 30 minutes. At the 30 minute mark mix the cashews through and place in oven for a further 10 minutes.
