Anyone who knows me, knows when I read a recipe I register about 4 ingredients necessary and then add whatever the heck I have at home, or interpret it in my own way to make it as simple as possible.
Chicken Snitzel has been a recipe in my family ever since I was born. Having a German background with chef grandparents that loved to cook and cater I couldn’t remember a family event without it.
Until, I found out I had coeliac disease. Six years ago now, and then all those snitzels I know, became snitzels I knew. sad sad day.
Anyways, this is my own Gluten-Free Coeliac Safe version that tastes exactly the same! Just Easier. Ingredients:
- Chicken Breast, sliced thinly.
- 1-2 Eggs (whisked)
- 1/2 cup almond meal
- 1/4 cup GF bread crumbs
- Tbs dried herbs & garlic powder
- Brocollini & GF Gravy mix for side.
So easy, just coat your sliced chicken breast in the whisked egg, then in another bowl combine all your dry ingredients and dip the coated chicken breast into your dry mix.
Heat coconut oil on a pan, and shallow fry (turning only once so it stays nice and tender) cook each side for 8-10 minutes.
I shallow fry the brocollini in coconut oil as well, and using the pan the chicken was cooked on add beef stock, herbs, garlic & water to make gravy or you could use a GF gravy mix.
