I say guilt free because their is nothing in these ‘protein’ balls that shouldn’t be consumed daily. These healthy balls make the perfect fridge go-to snack whenever you need. In term’s of adding protein, because I am currently pregnant – I substitute out the protein.
- 1/2 cup softened dates (boil water & place in bowl to soften)
- 1 cup almond meal
- 1/3 cup protein powder (optional) otherwise flaxseed is a great alternative
- 1/2 cup shredded coconut
- 1/3 cup coconut oil
- 3 tbs cacao powder
- 1 tbs chia seeds
Blend all ingredients in a blender or food processor until combined & sticky enough to roll. If it is to moist – add more almond meal. Lay out shredded coconut on your cooking surface, spooning parts of the mixture and rolling into small balls covering with shredded coconut.
