Being a coeliac dining out can be tougher than usual, especially when you are craving something you know you can get quick and easy down the road like Guzmans. I used to devour Guzmans on occasion and absolutely enjoy it but as restaurants change their menu and processes, Guzmans sadly can no longer guarantee no cross-contamination for coeliacs.
My own take of nachos, is healthy, delicious and easy.
Ingredients:
- chuck steak
- Chilli powder, onion powder, garlic powder, mixed herbs, paprika & ground cumin
- A cup of boiling water
- GF soy sauce
- 2 x Avocado
- lemon juice
- Can of diced tomatoes
- Gluten free organic chips
- lactose-free cheese
Using a pressure cooker (purchase from KMART, it will be your favourite decision yet) quickly saute the outsides of the steak. Mix all of the spices and a splash of soy sauce together in a cup of boiling water then pour over the steak and pressure cook for 45 minutes. Once cooked, drain, place in a bowl and shred.
Line an oven safe tray with your Gluten Free Organic Chips, layer the canned tomatoes and place your shredded beef on top. Add cheese and cook under the oven grill for 10 minutes.
Prepare your guacamole by mashing avocado, lemon juice and oregano (or dried herbs) in a bowl.
Spread your guac on top and 55 minutes later, you have your own version of safe Guzmans!
