I thought I loved a good snickers slice, but this has taken me to an all new level! I had a craving for Nutella and what better way to satisfy it with a guilt-free alternative thanks to the beauty of hazelnuts and the art of ‘winging it’ I hope you enjoy this recipe!
NUTELLA LIKE SLICE
TO MAKE IT
BASE
Pitted Dates (1 cup – soak in hot water for 10 minutes to soften), Almond meal (2 cups), Flaxseed meal (1/2 cup)
Using a food processor (you can use a blender following the same method but it just is harder work for the blender) add in all base ingredients and mix on high. Line a tray with baking powder and pour in your base layer and press it down tightly. Pop in the freezer while you prepare the top layer.
TOP LAYER
Hazelnuts (200g), Rice malt syrup (1/2 cup), Cacao powder (3 tbsp), Coconut Milk (1/4 cup – add and extra tbsp if mixture is too thick), Vanilla Extract (1 tsp), Coconut Oil (2 tbsp).
Heat an oven to 180 degrees and line a baking tray. Place your hazelnuts in the oven for 10 minutes so that the shells can easily be removed. You can remove the shells once cooled by placing in a paper towel/tea cloth and rubbing them together until the shells just shed off. Combine all ingredients in a food processor and mix on high until consistency is gooey like. Pour mixture on top of your base layer and return to freezer. Ready in 4-6 hours. Keep frozen.
