If you have ever been to my house, you would know I keep stock of raw snickers slice in the freezer, well… I like too, but everyone just eats it so damn quick that I wonder why I even made it anyways? ha ha just kidding. Do yourself a favour and make this raw snickers slice apart of your fortnightly raw bake. It is always good to have guilt free treats on hand when you need them.
Ingredients:
Base Layer:
- 2 cups almonds
- 1/2 cup flaxseed or lsa mix
- 1 cup dates (soak dates in hot water for 10 minutes prior to soften, then drain)
Base Process: In a food processor or blender combine all ingredients and mix on medium until it resembles breadcrumbs. The texture of the base must be a little sticky to hold together, if it isn’t sticky/ holding together when pressed together then add more dates.
Press in a tray lined with baking paper and pop in the freezer while you prepare middle layer.
Middle Layer:
- 3/4 cup (maybe a bit more) smooth peanut butter
- 3/4 cup (maybe a bit more) of unhulled tahini
- 1/2 cup coconut oil (melted and cooled)
- 1/2 cup rice malt syrup
Middle Process: Simply combine all of the middle layer ingredients in a food processor or blender and mix on medium speed until blended like a caramel. Pour mixture over base and pop back in freezer.
Top Layer:
- 1/2 coconut oil (melted and cooled)
- 1/4 cup rice malt syrup
- 1/4 cup raw cacao
Top Process: In a bowl, combine all ingredients and whisk together then pour over middle layer and pop back in freezer for 2-4 hours.
Adjust quantities on the top layer to create a thicker top layer if you wish.
Keep slice in freezer until every little piece is consumed.
