One of the easiest go-to meals is a sheppards pie! I love that this meal is so tasteful but yet pretty healthy for you and your family. It lasts a fair few days too, because it makes so much!
Ingredients:
- Lean Turkey Mince (cook through in pan)
- Sweet potato x 2 (boil in water then mash with almond milk & dairy free butter)
- Frozen mix of peas, corns & carrot
- Brown Rice (pre-cooked pack)
Base Ingredients (for sauce):
- GF soy sauce
- GF worcester sauce
- GF plain flour
- Beef stock
- GF tomato sauce (optional – try make sure its sugar free or low sugar!)
Add all Base ingredients including the frozen mix and brown rice to your cooked turkey mince until it holds together nicely. Dish into a baking dish lined with baking paper, add your sweet potato mash layered on top and bake in oven for 10 minutes. (Don’t mind my serving sizes below that appear extremely large, it was to feed a hungry working human man ha ha!)
