This meal came about as I’ve been buying prawn’s lately in bulk fresh from the trawlers at the seafood markets. You should try it sometime you know! Not only do you find it rewarding knowing your supporting locals but generally the price is pretty good for the amount you get! These prawns last me easily 2-3 weeks as it’s not something you eat all the time! This plus any of your left over veggies you need to use makes the perfect “Speedy Seafood“.
TO MAKE IT
pre-cooked and peeled prawns (500g)
brocollini bunch, capsicum, carrot, beans, spring onion, minced garlic,
vermicelli noodles, basil leaves chopped, nuttelex coconut butter, coconut oil.
Heat one fry pan to medium heat adding nuttelex coconut butter and minced garlic into the pan while stirring. Add your fresh prawns and chopped basil into the pan while cooking the prawns. Flip prawns occasionally until cooked. In a separate pan add coconut oil, minced garlic and all of your vegetables. Stir until cooked through. In a small pot boil water and once boiled add vermicelli noodles, when soft (about 2-3 mins) remove noodles from pot, chop 4 ways into smaller noodles and stir in with vegetables on pan before serving.
