CHICKEN CUPS
I am all about a throw together meal that combines multiple vegetables! Especially when I need to use up a heap of vegetables before they would go to waste but don’t want to just serve them straight on a plate. This quick meal does all of those things combining nutrition, use of any vegetables you have and the key chicken!
TO MAKE IT
Chicken Breast, Zucchini (1 – diced), kale (handful per plate), capsicum (1 – diced), onion (1 – diced), garlic (1 tbs), vegetable broth powder, lettuce cups, homemade salsa (recipe in VEGAN eBook)
Heat pan to high and saute the chicken. Slowly add onion, capsicum, zucchini until cooked through.
Toss in vegetable broth powder, garlic and 1/4 of water. Serve in lettuce cups and top with homemade salsa if desired.
