Warning – these are highly addictive and if made should be done in large batches because you will eat a lot and it is better that you have some remain for when the craving strikes again!

DATE DROPS
TO MAKE IT
THE DATE JAM
Pitted Dates (1/2 cup – soak in hot water for 10 minutes to soften)
Using a blender or hand mix blender – blend the dates until they resemble a thickened paste.
THE COOKIE
Gluten free flour ( 1, 1/2 cups), Tapioca flour (1/2 cup), Flaxseed meal (1/3 cup), Coconut sugar (1/2 cup), Shredded coconut (1/4 cup), Coconut butter (1/3 cup – melted), Maple Syrup (1/3 cup).
Heat an oven to 180 degrees and line a baking tray.
Place all the dry ingredients in a large mixing bowl and mix with a fork until combined.
In a seperate bowl mix your melted coconut butter and maple syrup.
Slowly pour and mix the wet ingredients to the dry ingredients. You may need to use your hands to combine this. If it still seems dry add a little more melted coconut butter and maple syrup.
Once combined it should resemble a firm but soft texture for you to easy mould into a round cookie like shape and press in the centre. Line these on the baking tray and spoon in your date paste.
Cook in the oven for 10-15 minutes and cool before consuming! Enjoy! x
