It’s no secret that all of my recipes that you find here and in my eBooks are already gluten free. You can thank being diagnosed 10 years ago with Coeliac disease for that. I must admit that living a gluten free lifestyle isn’t as hard as you think. I know I have being doing it for a long time so it is my reality but one I am thankful for. It is essentially what sparked my interest in cooking and passion for living a whole foods lifestyle.
This zucchini slice is just another one of those things that requires one supplement ingredient to take it from gluten filled to gluten free. I wholeheartedly love a baked zucchini slice because of how easy it is to make and you can add in whatever vegetables you need to use up from the fridge. A grater will be your best friend for doing this!
ZUCCHINI SLICE
TO MAKE IT
Zucchini ( 1 large – grated), onion (1 – diced), tomato (1 – diced), spinach (handful – diced), eggs (5 – whisked), cheese (handful – grated), gluten free flour (1 1/2 cup)
Heat an oven to 180 degrees and line a baking tray.
In a bowl with your whisked eggs add all vegetables and cheese. Mix in the rice flour and slowly add gluten free flour until fully combined. Pour into baking dish.
Cook in oven for 25 minutes
