I feel like I am queen of quick! Quick Lamb Cutlets are an easy favourite! Quick because who wants to spend hours in the kitchen. The trick with being quick is also being organised. If I don’t get a plan in place then it ain’t happening so when I want sweet potato chips the trick is first thing when arriving home from work to cut them up and put them in the oven! They are going to take an hour so you may as well put them on and then take the dog for a walk, unpack and all that other jazz.
Quick Lamb Cutlets
TO MAKE IT
Lamb Cutlets, Sweet Potato (1 – sliced into chips), spinach (handful per plate), strawberries (6 – sliced), coconut butter, garlic (1 tbs), paprika spice, garlic powder, onion powder, Himalayan salt.
Heat oven to 180 degrees. Slice sweet potato into chips, toss with paprika spice, garlic powder, onion powder, Himalayan salt and line them on a baking tray then pop into oven for an hour.
When sweet potato chips near finishing heat a pan to medium high heat. Place coconut butter and garlic in pan until melted. Add in lamb cutlets and cook each side through for 8 minutes.
Serve with sweet potato chips, spinach and strawberries tossed together.
