There is no part of me that ever feels genuinely guilty about the food I cook or eat. This is because I always endeavour to use quality ingredients, a combination of abundant and nutritious vegetables and know that it is wholly serving my body a good purpose. Filling it with the fuel it desires. If you make the food you love with flavours you love then why would you ever be missing out?
LEMONGRASS CHICKEN
TO MAKE IT
Chicken Breast, minced lemon grass, lemon (1 – freshly squeezed), basil, Zucchini (1 – spiralised), carrot (1 – shredded), beans (1/2 cup – diced), frozen peas (1/2 cup), garlic powder, extra virgin olive oil.
Combine in a bowl the lemon juice, minced lemongrass and herbed basil. Slice your chicken breast and coat in the lemongrass marinate.
Heat a pan to high with oil and cook each side of the chicken for 8 minutes until tender. Remove and put aside. Add in more oil and all vegetables and garlic powder. Cook for 3-5 minutes and serve as pictured.
